Step 1: Prepare the Cucumbers
- Start by giving your cucumbers a good rinse under cold water. Once clean, chop off both ends. That’s right; it's time to get your fancy pants on.
Step 2: Cutting the Accordion ‘Wings’
- This is where things get a bit crafty. Place one cucumber between two chopsticks (or any other small sturdy items you have that won’t mind getting nicked).
- Now, grab your sharp knife and make thin, diagonal slices into the cucumber, but be careful not to slice all the way through! You want the cucumber to hold its shape like an accordion, so keep an eye on your knife's depth. Flip the cucumber and repeat this slicing technique on the other side. This can feel a bit tricky at first, but with practice, you’ll get it just right.

Step 3: Salt the Cucumbers
- Now it’s time to draw out some moisture. Sprinkle the salt over the cucumber pieces, and gently massage it in so that it can do its thing. Let these sit for about 5 to 10 minutes. Any longer, and you'll end up with mushy cucumbers, which we don’t want!
- After the time has passed, rinse the cucumbers under cold water three to four times—this helps remove excess salt. Strain the cucumbers and let them sit while you prepare the dressing.
Step 4: Make the Dressing
- In another bowl, combine the soy sauce, minced garlic, rice vinegar, chili oil, sugar, sesame oil, and grated ginger. Give it a good whisk until everything is mixed well and the sugar is dissolved. This dressing should have a nice balance of savory with a hint of sweetness and a bit of heat from the chili oil.
Step 5: Combine and Enjoy!
- Pour the dressing over the cucumber pieces and toss gently. You want to ensure all the cucumbers get coated without breaking them apart. After that, sprinkle with sesame seeds and sliced green onions for that extra crunch and flavor. Serve immediately or let it sit in the fridge for a bit to let the flavors meld together.
