Apple Crisp Instant Pot

Ingredients
  

  • Here’s what you’ll need for this delightful Apple Crisp made in your Instant Pot:
For the Crumb Topping:
  • - 1/2 cup all-purpose flour
  • - 1/2 cup old-fashioned rolled oats
  • - 1/2 cup light brown sugar
  • - 1/4 teaspoon ground nutmeg new addition for a warm kick
  • - 1/2 teaspoon ground cinnamon
- Dash of salt
  • - 6 tablespoons unsalted butter cut into small pieces (chilled is best)
  • For the Apple Filling:
  • - 4 small Granny Smith apples chopped into 1-inch chunks
  • - 2 tablespoons unsalted butter melted
  • - 1 tablespoon lemon juice
  • - 1/2 teaspoon vanilla extract
  • - 1/4 cup light brown sugar
  • - 1/2 teaspoon ground cinnamon
  • - Dash of salt
  • - 1 cup water

Method
 

Step 1: Prepare the Crumb Topping
  1. In a medium bowl, mix together the flour, oats, brown sugar, nutmeg, cinnamon, and salt. Use a fork or pastry blender to combine until it resembles small crumbs. When you achieve that crumbly texture, add in the chilled butter pieces. Just keep mixing until everything is well combined. Once done, pop it in the fridge while you tackle the apple filling.
Step 2: Make the Apple Filling
  1. Grab another mixing bowl and combine the melted butter, lemon juice, vanilla extract, brown sugar, cinnamon, and a pinch of salt. Stir until everything is mixed well. Now, toss in those chopped Granny Smith apples and gently coat them in that sweet buttery mixture.
Step 3: Set Up Your Instant Pot
  1. Spray the inside of your Instant Pot with a non-stick cooking spray to avoid any sticky situations later. Pour the apple mixture into your pot, then add the cup of water. It’s key to have that water for steaming!
Step 4: Add the Topping
  1. Now, sprinkle the crumb topping evenly over the apples in the Instant Pot. It should cover them nicely, creating that iconic apple crisp layer we all know and love.
Step 5: Cook the Crisp
  1. Cover your Instant Pot lid and set it to cook on high pressure (manual setting) for 1 minute. Yes, just a minute! When the timer beeps, carefully turn the valve for a quick release of the steam. Start slow to let out the steam before fully opening it.
Step 6: Final Optional Crisp
  1. If you want that nice, toasty finish on the topping, you can transfer individual servings into an oven-safe dish and pop it under a broiler for around 1-2 minutes. Just keep an eye on it to avoid burning.

Notes

- Store any leftovers in an airtight container in the fridge for up to five days.
- Feel free to swap out Granny Smith apples for your favorite variety like Honeycrisp or Fuji.
- For a nuttier topping, try adding chopped walnuts or almonds to the crumb mixture.
- If you prefer a sweeter dish, increase the brown sugar in the apple filling.
- Top with a scoop of ice cream or freshly whipped cream for an indulgent treat!
