  • 4 low-carb whole wheat tortillas
  • 6 large eggs
  • ½ cup creamy cottage cheese
  • 4 slices sharp white cheddar
  • ¼ teaspoon salt
  • 1 teaspoon smoked paprika

  • Now that you have your ingredients ready, let’s get cooking! Follow these steps for a tasty breakfast you won’t forget.

Step 1: Cook the Meat

  • If you are using bacon, heat a skillet over medium heat. Cook the bacon strips until they are crispy. Drain on paper towels, letting the extra grease drip off. If you prefer chicken sausage, cook it according to package instructions in the same skillet for a bit of extra flavor.

Step 2: Scramble the Eggs

  • In a bowl, crack the eggs and beat them well. You can whisk in a little salt for seasoning. Melt the butter in the same skillet on medium-low heat. Pour in the beaten eggs. Stir gently until they are just set. Don’t overcook them; they should be soft and fluffy.
