  • 3 tablespoons unsalted butter melted (avoid margarine)
  • 3 tablespoons organic cane sugar or regular granulated sugar
  • 3 tablespoons lightly packed golden brown sugar
  • 2 tablespoons pure honey
  • 2 teaspoons filtered water
  • Pinch of flaky sea salt

Bran Muffins

  • 1 cup oat bran or wheat bran use either for a nutty flavor
  • 1 cup unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon aluminum-free baking powder
  • 1/4 teaspoon fine kosher salt
  • 1/3 cup lightly packed light brown sugar dark brown sugar can also be used for a richer taste
  • 1/4 cup pure honey
  • 2 tablespoons unsulphured molasses
  • 1/4 cup neutral vegetable oil avocado oil recommended
  • 1 large free-range egg
  • 2 tablespoons heavy cream or half-and-half
  • 1/4 cup room temperature water
  • 1 1/2 – 3 teaspoons finely grated orange zest optional, mix in or sprinkle on top
  • 1 teaspoon vanilla extract new addition for a hint of warmth
  • 1/4 cup chopped dried apricots or raisins new addition for a burst of natural sweetness

Instructions
 

Step 1: Prepare the Honey Glaze

  • Start by combining melted butter, both sugars, honey, water, and a pinch of salt in a small saucepan over low heat. Stir until the sugars dissolve completely. This will create a sweet glaze to complement your muffins.

Step 2: Mix Dry Ingredients

  • In a large bowl, whisk together the oat bran, flour, baking soda, baking powder, and salt. This is crucial. Mixing these dry ingredients evenly ensures that the leavening agents distribute well, giving the muffins a good rise.

Step 3: Combine Wet Ingredients

  • In a separate bowl, mix the brown sugar, honey, molasses, oil, egg, cream, water, and vanilla extract. If you’re using orange zest, add it here. Whisk until everything blends smoothly. This mixture is where the magic happens, infusing flavor into your muffins.

Step 4: Combine Mixtures

  • Pour the wet ingredients into the bowl with dry ingredients. Stir gently until just combined. Overmixing can lead to tough muffins, so frequent gentle folding is the way to go. You want a few lumps; trust me.

Step 5: Add Fruits and Glaze

  • Fold in the chopped dried apricots or raisins. These little bites of sweetness will pop in every bite. Grease a muffin tin and spoon the mixture into each cup, filling them about two-thirds full. Drizzle a bit of the honey glaze on top of each muffin before baking.
