Equipment

  • Mini muffin tin
  • Non-stick spray

Ingredients

Chocolate Munchkin Donuts

  • ½ cup granulated sugar
  • 1 large egg
  • ¼ cup whole milk
  • 6 tbsp heavy whipping cream
  • ¼ cup neutral oil
  • 1 tsp pure vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup dark cocoa powder
  • ½ tsp baking soda
  • ½ tsp instant espresso powder

Chocolate Glaze

  • 1 cup sifted confectioners’ sugar
  • ¼ cup sifted unsweetened cocoa powder
  • 2 –3 tbsp warm milk
  • 1 drop teal food coloring

Butternut Coating

  • 2 cups finely shredded coconut
  • ¼ cup powdered sugar
  • 4 tbsp melted unsalted butter
  • 1 tsp almond extract
  • 2 drops bright orange gel food coloring

Instructions

  • Now, let’s roll up those sleeves and get started!

Step 1: Preheat Your Oven

  • Preheat your oven to 350°F (175°C). This simple act ensures that your munchkins will bake evenly and come out golden.

Step 2: Prepare the Batter

  • In a mixing bowl, combine the granulated sugar and egg. Whisk them together until you get a light and fluffy mixture. Next, slowly incorporate the whole milk, whipping cream, neutral oil, and vanilla extract. Stir until combined.

Step 3: Incorporate Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, dark cocoa powder, baking soda, and espresso powder. Gradually add this dry mixture to the wet ingredients, stirring gently to avoid overmixing. The batter should be velvety and well-combined.

Step 4: Bake the Munchkins

  • Prepare a mini muffin tin with non-stick spray or line it with paper liners. Fill each cup halfway with the batter. Bake for about 10-12 minutes or until a toothpick comes out clean. Allow cooling in the tin for a few minutes, then transfer them to a wire rack.

Step 5: Prepare the Coating

  • While the munchkins cool, prepare the coating. In a small bowl, mix the shredded coconut, powdered sugar, melted butter, almond extract, and food coloring. This will give your munchkins that signature butternut look.

Step 6: Coat the Munchkins

  • Once the munchkins are completely cool, roll them in the coconut mixture until evenly coated. Make sure each one is generously covered. You’ll want to see that beautiful layer of coconut!

Step 7: Serve and Enjoy!

  • Arrange your freshly coated munchkins on a serving platter. They’re best served fresh but can be stored for later enjoyment!

Notes

Here are five handy tips for perfecting your Dunkin’ Donuts Butternut Munchkins:
  • Don’t Overbake: Keep a close eye on your munchkins while baking. Overbaking can lead to a dry texture. Remember, they will cook a bit more once out of the oven.
  • Experiment with Flavors: While the classic butternut flavor is fantastic, don’t be afraid to add a hint of orange or lemon zest for a zesty twist.
  • Make Them Mini: For a fun twist, make mini munchkins instead of the regular size. They make great party snacks!
  • Storage Strategy: Place leftovers in an airtight container to keep them fresh. Enjoy them within a few days for the best flavor.
  • Double the Batch: If you have a crowd to please, think about doubling the recipe. They’ll vanish quickly, trust me!
