Ingredients
  

  • 1/4 cup grated Monterey Jack cheese
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon crispy bacon bits
  • 4 large eggs
  • 4 tablespoons ricotta cheese
  • 1/4 teaspoon sea salt
  • 1/4 cup shredded sharp cheddar cheese with additional for topping, if preferred
  • 1/4 teaspoon smoked paprika

  • Let’s dive into the process that will bring your egg bites to life!

Step 1: Preheat the Oven

  • Start by preheating your oven to 350°F (175°C). This ensures that your egg bites begin baking at the right temperature.

Step 2: Prepare the Muffin Tin

  • Grease a muffin tin with olive oil or non-stick spray to prevent sticking. You can also use silicone muffin cups for easy release.

Step 3: Whisk Eggs

  • In a large bowl, break the four eggs. Whisk them until well combined, adding in the sea salt and smoked paprika. This mixture is the base of your egg bites.

Step 4: Fold in the Cheeses

  • Add in the ricotta cheese, Monterey Jack, and shredded cheddar. Mix carefully; you want a uniform blend while being careful not to deflate the eggs.

Step 5: Add Bacon and Chives

  • Fold in the crispy bacon bits and chopped chives. These give the egg bites a delightful burst of flavor.

Step 6: Pour Into Muffin Tins

  • Fill each muffin cup about three-quarters of the way full with the egg mixture. Leave a little room at the top; the bites will puff up while baking.

Step 7: Bake

  • Place the muffin tin in your preheated oven. Bake for about 18-20 minutes or until the tops are set and a toothpick comes out clean.

Step 8: Cool and Serve

  • Once they’re done, remove them from the oven. Let them cool for five minutes before gently removing the egg bites from the muffin tin. Serve warm, or place in the fridge for later!
