Anna Warden
As I stood in line at Dunkin’ Donuts, the familiar aroma of coffee mixed with sweet pastries wafted around me. My eyes wandered to the display window, and there it was—the toasted coconut donut.

Equipment

  • Oven

Ingredients

Donuts

  • 2 large eggs at room temperature
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ½ cup coconut oil melted
  • 1 ½ teaspoons coconut extract
  • ½ teaspoon vanilla bean paste for a richer vanilla flavor
  • 1 cup toasted shredded coconut adds a deeper nutty flavor
  • 2 cups cake flour or substitute with all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt a slight upgrade from kosher salt for better dissolution
  • ½ teaspoon ground cinnamon enhances warmth and depth of flavor
  • ½ cup coconut cream or full-fat coconut milk

Glaze

  • 1 ½ cups powdered sugar
  • 1 tablespoon coconut oil melted
  • ½ teaspoon vanilla bean paste
  • ¼ teaspoon coconut extract
  • 3 tablespoons coconut cream or full-fat coconut milk

Instructions

Step 1: Prepare the Ingredients

  • Gather all the ingredients. Make sure everything is ready and within reach. Preheat your oven to 350°F (175°C) and grease your donut pan. This is essential to ensure your donuts come out perfectly!

Step 2: Mix Dry Ingredients

  • In a bowl, combine the flour, baking powder, salt, and ground cinnamon. Give it a good whisk to blend everything together. This might seem simple, but it sets the foundation for a well-risen donut.

Step 3: Combine Wet Ingredients

  • In another bowl, mix the eggs, granulated sugar, brown sugar, melted coconut oil, coconut extract, and vanilla bean paste. Whisk until it’s smooth. This mixture should feel light and airy.

Step 4: Combine Wet and Dry Mixtures

  • Gradually fold the dry mixture into the wet mixture. Be gentle here. You don’t want to overmix. You want those fluffy donuts!

Step 5: Add Coconut

  • Gently fold in the toasted shredded coconut and the coconut cream. The coconut will provide texture and flavor, enhancing your donuts.

Step 6: Fill the Donut Pan

  • Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full. Give it a little shake to settle the batter.

Step 7: Bake

  • Place the donut pan in the oven and let it bake for about 12-15 minutes. The donuts should be golden brown and spring back when gently pressed.

Step 8: Make the Glaze

  • While the donuts are baking, prepare the glaze by mixing powdered sugar, melted coconut oil, coconut extract, and coconut cream in a bowl. The consistency should be smooth and slightly runny.

Step 9: Cool and Glaze

  • Once the donuts are done, take them out of the oven and let them cool in the pan for a few minutes before transferring to a wire rack. Dip the still-warm donuts into the glaze, letting it drip off.

Step 10: Top with Toasted Coconut

  • While the glaze is still tacky, generously sprinkle toasted coconut flakes on top. Let the glaze set before indulging.

Notes

  • Egg Temperature Matters: Use eggs at room temperature to ensure they blend easily into the batter and create a light texture.
  • Don’t Skip Toasting Coconut: Toasting adds depth to the flavor, taking your donut from good to great.
  • Use Cake Flour: It’s slightly lower in protein than all-purpose flour and leads to softer donuts.
  • Baking Powder Check: Make sure your baking powder is fresh. An expired leavener will yield denser donuts.
  • Experiment with Flavors: If you want to switch it up, consider adding a touch of almond extract for a complementary flavor.
