Waking up can be a challenge. The morning sun might be shining, but often, all I want is to hit the snooze button and grab a few more minutes of sleep.

Equipment

  • Non-stick Skillet

Ingredients

  • 2 soft 8-inch flour tortillas
  • 2 strips of crispy bacon
  • 1 teaspoon of butter or a light spray of cooking oil
  • 2 large eggs beaten
  • 2 slices of melted American cheese
  • 1 tablespoon of chopped fresh cilantro
  • 1 teaspoon of hot sauce

Instructions

Step 1: Prepare Your Ingredients

  • Start by gathering your ingredients on a clean countertop. It’s always easier to have everything at the ready. Cook your bacon until it’s crispy, and make sure to drain it on paper towels.

Step 2: Cook the Eggs

  • In a non-stick skillet, add butter or cooking oil over medium heat. Once melted, add the beaten eggs. Stir gently, allowing them to scramble. Remember, you want soft, fluffy eggs, so don’t rush this step! Remove them from the heat when just set.

Step 3: Warm the Tortillas

  • Heat up your flour tortillas in the same skillet for about 15 seconds on each side. This makes them pliable and enhances their flavor.

Step 4: Assemble the Wrap

  • Layer the scrambled eggs on the tortilla, followed by the crispy bacon. Add your slices of melted American cheese on top of the eggs and bacon. Sprinkle chopped cilantro over the cheese, and finish with a dash of hot sauce, if you prefer some heat.

Step 5: Wrap it Up

  • Fold in the sides of the tortilla, then roll it up tightly from the bottom. This will ensure that everything stays inside.

Step 6: Serve and Enjoy!

  • You can either enjoy it right away or pop it in the skillet for another minute to get a nice golden exterior.

Notes

  • Customize your proteins: Swap bacon for turkey bacon or ham. Even sausage works well.
  • Add vegetables: Spinach, bell peppers, or avocados can bring extra flavor and nutrients.
  • Mix cheeses: Try pepper jack or cheddar for a different flavor profile.
  • Pre-make and freeze: Prepare the wraps ahead of time, wrap them in foil, and freeze. You can reheat them easily in the microwave.
  • Spice it up: Experiment with different hot sauces to find your perfect match!
