  • 3 tbsp thick Greek yogurt full-fat preferred
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 tbsp dried oregano
  • 1 tsp fine sea salt
  • Freshly cracked black pepper to taste
  • 1/2 tsp ground cumin
Tzatziki
  • 1 garlic clove finely minced
  • 1 tbsp extra virgin olive oil add more for richer flavor
  • 1 1/4 cups creamy Greek yogurt full-fat recommended
  • 2 cucumbers grated and squeezed dry (to yield ~ 1/2 – 3/4 cup)
  • Freshly ground black pepper
  • 1 tbsp fresh dill finely chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt
Chicken
  • 2 lb / 1 kg boneless skinless chicken thighs (trimmed and cut into chunks)
Salad
  • Salt and black pepper to taste
  • 3 ripe tomatoes deseeded and diced
  • 1/4 cup fresh parsley leaves chopped (optional)
  • 3 crisp cucumbers diced
  • 1/2 red Spanish onion finely chopped
To Serve
  • 4 to 6 soft pita breads or flatbreads warmed

Step 1: Marinate the Chicken
  1. Mix together the lemon juice, white wine vinegar, garlic, Greek yogurt, olive oil, dried oregano, salt, black pepper, and cumin in a bowl. Add the chicken thighs and ensure they are fully coated with the marinade. Cover and refrigerate for at least 30 minutes. For the best flavor, let it marinade overnight.
Step 2: Prepare the Tzatziki
  1. While the chicken marinates, make the tzatziki. In a mixing bowl, combine the minced garlic, olive oil, Greek yogurt, grated cucumbers (squeezed dry), black pepper, dill, lemon juice, and salt. Stir well and refrigerate to allow the flavors to meld.
Step 3: Cook the Chicken
  1. Heat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade, shaking off any excess. Grill for approximately 6-7 minutes on each side or until fully cooked and charred. The internal temperature should reach 165°F (74°C). Remove from the heat and let it rest for a few minutes before slicing.

  1. While the chicken rests, prepare your fresh veggies. Dice the tomatoes, cucumbers, and onion. Each piece should be bite-sized for easy wrapping.
