Ingredients
  

  • 4 large eggs lightly whisked
  • 2 teaspoons fish sauce or to taste
  • 1 ½ cups fragrant jasmine rice rinsed until the water runs clear
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon grated fresh ginger
  • 1 tablespoon light olive oil or neutral cooking oil
  • 1 ½ cups frozen peas and diced carrots thawed slightly
  • 3 tablespoons low-sodium soy sauce
  • ¼ teaspoon crushed red pepper flakes for a gentle kick
  • 2 scallions thinly sliced (white and green parts separated)
  • 1 ½ cups water
  • ½ teaspoon garlic powder or substitute with 1 clove fresh garlic, minced

Step 1: Sauté the Aromatics
  1. Begin by setting your Instant Pot to the "Sauté" function. Once hot, add the olive oil. After a minute, toss in the minced garlic (if using) and the white parts of the scallions. Stir frequently to prevent burning, enjoying the fragrant smell that fills the kitchen.
Step 2: Add Eggs and Cook
  1. Next, pour in the lightly whisked eggs. Stir continuously until the eggs are fully cooked. This step adds a rich texture to your fried rice. Push the eggs to one side of the pot.
Step 3: Mix in the Vegetables
  1. Now, add the thawed peas and carrots. Stir everything together, allowing the veggies to warm up and mingle with the eggs and aromatics for a few minutes.
Step 4: Incorporate Rice and Seasoning
  1. Add the rinsed jasmine rice, sesame oil, fish sauce, soy sauce, and ginger. Mix well, ensuring every grain of rice is coated. This is where the magic begins. Combine fully!
Step 5: Add Water and Cook
  1. Pour in the water, giving everything one last stir. Lock the Instant Pot lid in place, ensuring the valve is set to sealing. Select "Manual" on high pressure and cook for 5 minutes.
Step 6: Release Pressure
