  • 1/4 cup canola oil

  • 2 tablespoons seafood seasoning blend

For the Crab Spread:

  • 1/2 pound jumbo lump crab meat
  • 1 tablespoon finely chopped fresh dill
  • 1/4 cup aioli
  • 1/4 cup whipped cream cheese
  • 1 1/2 teaspoons seafood seasoning blend
  • Squeeze of fresh lemon juice

For the Sandwich:

  • 4 toasted buns if preferred
  • Fresh leaf lettuce
  • Sliced tomato
  • 4 slices aged cheddar-gruyere blend cheese

Instructions
 

Step 1: Marinate the Chicken

  • Start by whisking together mustard, canola oil, apple cider vinegar, and seafood seasoning. Coat the chicken breasts with this marinade. Let them rest in the fridge for at least 30 minutes to absorb all that tangy goodness.

Step 2: Prepare the Crab Spread

  • In a medium bowl, fold together the crab meat, dill, aioli, whipped cream cheese, seafood seasoning, and lemon juice. Mix gently until combined. Be careful not to break the crab chunks too much.

Step 3: Cook the Chicken

  • Fire up your grill or pan to medium heat. Grill the marinated chicken breasts for about 6-8 minutes per side, or until they’re cooked through. Remember, no one likes dry chicken—juicy is the aim here.

Step 4: Assemble the Sandwich

  • Toast your buns lightly for added crunch. Spread a generous layer of crab mixture on the bottom bun. Place a grilled chicken breast on top. Add a fresh leaf of lettuce, a slice of tomato, and a piece of the cheddar-gruyere blend cheese. Cap it with the top bun and give it a gentle press.
